Pea flour is a flour obtained from one of the pea varieties. It is very popular in many countries, especially in India. In India, pea flour is often used in fat-fried dishes, because it gives them a crunchiness, e.g. in the popular pakora, besan chilla or even potato pancakes. It is also a great thickener for sauces, e.g. kadhi pakora or dahi aloo. Also popular for the preparation of sweets, e.g. ladoo, burfi or halwa.
